travel and living abroad while waiting for visa

Hello, i live in the states and my fiance and i are waiting for our k-1 visa. Is it ok to live in colombia for a couple months while we are waiting for the visa? Also, i have one child that would come live with us and there is no problem getting the fathers consent. How could i find more info. and facts on how to do this? Thank You
