The Perfect Hard Boiled Egg

Since, eggs are so healthy (low carb) and very inexpensive. They make a great food for all of us poor but happy crowd in Colombia. I found the perfect recipe on the net, tried it and they were perfect. The yolk was even the perfect yellow with NO discoloration.

1) Put eggs in water with at least 1 inch of water above.
2) Heat on Hi, uncovered only until they boil (not a rolling boil).
3) Remove from heat and cover with lid and let stand for 17 minutes (exactly is what it said)
4) Take out eggs and put them in pan of iced water and let stand until cool/cold.

Enjoy!

For soft bold eggs the trick is once the water is boiling, put the eggs in there plus a some salt and wait just 5 minutes, then you will have some nice tasting soft bold eggs.

I don´t eat them usually but when I do I would take at least 4 of them.

Colombian eggs I prefer the campesino eggs where I live in Colombia. They yolks are a deeper yellow and the taste is better IMO.

You are correct about altitude. It took me awhile to get use to the difference in cooking between where I was at about sea level in California and here North of Bogotá.

Salt in the water - The purpose of salt in the water is to make the water boil at a higher temperature. Rather meaning, things will cook faster. (I always enjoyed the high school science projects proving that)

However, I have heard that the age of the eggs has much to do also with how well the shell comes off. I have not facts to support that, only heard it. But can say that I have never had any problems with fresh eggs from the farm that I hard boiled immediately.

Deviled eggs - So very popular in the USA, yet I have yet to see or hear of anyone making them here in Colombia.
