Sausages

I've had terrible trouble with Colombian chorizo. Looks good in the pan. But upon dining, the stuff is invariably full of fat and gristle. Every second mouthful containing a rather grim surprise. Horrible stuff- like the sausage you'd find served up at a railway station in Belgrade or in Sweeney Todd's London. Nothing like the wonderful, cartilage-free fare I've had in Spain or Italy.

Perhaps I've just been unlucky. Has anyone out there had a more palatable sausage experience when in Colombia?

Go to the grocery store and look for Americana brand hot dogs. They're just like the ones you're used to. As far as sausages, try the deli counter.

I ate chorizo at a women'e home who I was invited to meet. It was delicious!

Also purchased chorizo from a lady up in a finca in Venecia, had the cook at my hotel serve it up with some eggs and a arepa planchiada the next morning at it was delicious!

I love chorizo!

Chorizos come in mamy different shapes, sizes and flavors. It takes a while to sort them out. The only fresh ones that I like are from where I buy some of my meat, and several other places. My neighbors I don't like. Zenu is good and at this moment, Exito has some on sale. 4 for 2500 pesos. I fallen to the trap of it looks good, smells good, only to taste bad. Also the chicken chorizo that many come free with chicken or chicken patties is good. I use them in my pasta carbonara.

Those little hot dog-looking things are not what I'd call sausage. I call them little hot dog-looking things.

Morcilla does taste very good but I gave it up three years ago since I learned what it was. How foolish...

You can just keep buying the Spanish or Italian you like.
But in Colombia, eat Colombian (not a person)! I recommend you try the Zenu brand of chorizos, they are really good and are cartilage free.

sabrina, a friend of mine up in llano grande owns zenu (as well national de chocolate) and he doesn't eat zenu chorizo in la casa.....rather, the local fare.

Kalder what a wonderful post. I agree. I cannot stomach chorizo for the life of me. Add that to platanos and to a lesser extent the arepa balls, well, I have to be very selective as to what I eat in Colombia. Salchichon also makes me want to hurl.

And yes, the typcial sausage option in England isn't the greatest, but we do have a choice to get a high-quality type. Sainsbury's sells some good ones.

The ´Hot Dogs´ here are also pretty crap. Can´t tell if you´re supposed to peel the plastic wrapping off or not. Doesn´t seem to make much different to the taste anyway.
However, there may be a saviour in the shape of the Carulla chain of shops. I know that they sell Dainsh bacon etc., so maybe they sell Cumberland sausages. In fact, I´m going to look tomorrow cos I fancy a good old English fry up! Fugdis gave me his last tin of Heinz baked beans and my mouth´s watering already.

My Colombian family must take good care of me. I have never had bad chorizo or meat in Colombia. I am a coonass and we take sausage to an elevated art form including morcillo/blood sausage.

I would imagine you could have a local butcher grind and stuff a mixture to your tastes. I watched sister in law point and instruct the butcher in where to take a chunk out of the side of a beef carcass. She then watched him rough chop the meat and inspected it and had him remove small chunks of grisle and fat. He THEN ground and sold her EXACTLY one kilo of grond meat weighed out to three decimal places. None of this 1.03 is close enough to a kilo crap.

I love shopping in Colombia.

I have had excellent chorizo in Colombia, but there is a tremendous variation in quality, some of it is pretty gristly. Spanish chorizo can be pretty fatty too.

I make my own sausages at home....I pick the meat.. chop it up ...do the marinate and smoke for 8 - 10 hours....my sausages have no fat or bone or cartilage...and I agree the regular chorizos are horrible and full of every imaginable ingredient that is left over from he butcher.....including 2 day old meat they couldn't sell...be careful with your chorizo in Colombia

here's a pic of my smoker i made it myself it works pretty good but I'm going to do some modifications to it like an external fire box and doors instead of silder doors....poco a poco

I think the chorizo I had in Spain or Argentina is consistently better than the Colombian stuff. French saucisses are very nice, as is the spicy Italian stuff. Weisswurst is an abomination. Morcilla and Polish Kolbassa can be good. The worst sausages taste like Jimmy Hoffa.

Honestly, Kalder, I would follow the tenents of your own experience and shell out the extra few for Spanish. There are several places right off the Jimenez in Bogota where one can find reliably good Chorizo. Nothing compares to it, simmering with seafood and arborio rice or just hot out of the pan with fresh bread.

Chorizo is too good to mess around with, and you know the Spaniards will deliver. If in Cucuta, you're better off just stifling the craving under some blood sausage.
