Hello!
I have plans to make Bistec a la Criolla (first Colombian dish I tried) and I wanted to make Arepas also but...hahaha how can I explain it to make sense?
The man I want to amaze with my cooking skills' family is from Medellín and I wanted to make him ones from that area, and hopefully he will notice that. Am I completely off with this? I researched and saw some that were more moist, and with cheese? Is this they way to go?
Any advice you can give on the subject would be great, I do speak (read) a tiny bit of Spanish so if you reply that way I will give it a shot on translation...although if it was a recipe I might need help.

Save yourself the time and get a white corrugated box, cut out two disks about three inches in diameter, and glue them together, white side out. Repeat until you have enough "arepas" to fill a cute basket. Put the basket on the table surrounded by butter, salt, cheese, various meats, rice, beans, eggs, salsa/aji. It doesn't really matter what you stuff them with or cover them with, they're still going to taste like cardboard. Enjoy, or pretend to.

It's based on a Mayan or Aztec word and it has something to do with processing the corn with lime. It changes the chemical composition so more protein is available to humans (those Injuns were smart) because unless you're a ruminant, the good stuff passes right through you. Or something like that. You'll have to Google it for the whole story... I read about it a long time ago and I can't remember if corn that is processed in large, modern facilities goes through this nixtamalizado process.
