Re enter with valid AP docs but expired original K1 visa?

my new wife wishes to travel to Colombia.

she has her valid AP docs, her work permit (EAD) and a letter saying her AOS application is being processed in the CSC center.

but, she does not yet have a green card, even though they sent her AP docs and EAD permit about three months after we paid the $1010 fee for AOS.

now, her original K1 visa expired last month.

so, with a valid AP doc and a official letter saying her AOS application is being processed, will she be re enter the US on her return flight after 3 weeks in Colombia?

or do we need to schedule a visit to the local office to request further permission for her to re enter after her visit to Colombia?

The actual K1 visa is good for one entry into the US - period. After the initial use, it is moot and useless. Assuming "AP" means you are referring to Advanced Parole - the above poster is correct. The whole point of obtaining that, is to be able to travel outside of the US BEFORE obtaining permanent residency while the adjustment of status is in progress. Long story short, it looks like she in fine to go to Colombia and re-enter the US with the documents you / she already has. She may be interviewed briefly in a separate room after going through the immigration line at the airport. After she lands in the US, if it is necessary for her to make a connecting flight, make sure you schedule the connecting flight to be at least 3 or 4 hours after initial arrival.

Bring your Advance Parole, your proof of pending Adjustment of Status, and your marriage certificate. You will be fine.

Now if there was some reason for her being inadmissable and it is discovered well then she won't be let in. Advance Parole carries no guarentees.
