Looking for a pressure cooker recipe for tounge

Well I finally got up the nerve to use the darn thing. My wife tell me that they cannot survive in Colombia without these devices. Well the cheap meat used for the stew came out fantastic.

I'd like to surprise her with some cooked tounge (as I refuse to eat tripe soup) but am at a loss as to how to prepare it? Do you have to skin it or something?

Like guts basically, my wife commented on the high quality of the tripe that is sold in the USA it is cleaned and blanched apparently. Verses the stuff in Colombia apparently still has the stomach contents (meirda?) in it.

jaja! si! that`s mondongo here, very popular! and delicious, and that s a very good business here, on sundays, everybody wants to eat sopa de mondongo for el guayabo..
jajajajaj!! noo! the one with the (m....a) inside is the chinchurria..jajajajjaa that s the intestine, i think that s the word in english.
anyways, tongue is delicious as well, my mum makes it here, just make a sauce with tomatoes, onion, pimenton, garlic, salt, no se all that stuff...put the tongue with water to boil and all those things. jeje good luck! =P

I'll have a look in my cookbooks I think in Gran Libro de La Cocina Colombiana (excellent recipies from all the Regions) availible in all good bookshops but it's all in Spanish there is Lengua Cubierta & Lengua en Salsa both recipes are from Caldas if you like I could put the recipes on here would take a little time as I'm not the fastest typer ok?.
