Bill Turley (Moderator) (Trustee board) (☼Travelguide writer) says on Jun 21, 2009, 13:46: Kat, fruit pectin can be made by boiling apple peels in water. Yucca starch also works very well. That is the same as tapioca in the US Mr. Bill Somondoco 0 funny, 0 helpful. |

kat1 (Moderator) (Trustee board) (☼Travelguide writer) says on Jun 21, 2009, 14:28: lemon curd is not that common, My plan is to do few and selling it but i think i have to make sure people get free samples so they know what it like. We have Marmalade in Colombia which is what they call Jam here, but they are not very nice not as the homemade ones.

Bill Turley (Moderator) (Trustee board) (☼Travelguide writer) says on Jun 21, 2009, 14:55: Your plans for your finca sound very ambitious. My finca only grows a few guavas and one dog. Neighbors do graze their cows once in a while to keep the grass down. I do expect some coffee this year too. What I really grow is tranquility and peace. Still waiting Kat! You can cerainly use maizena to thicken jams and jellys too. Have you ever had chicharon de cuajada? Mr. Bill Somondoco 0 funny, 0 helpful. |

Bill Turley (Moderator) (Trustee board) (☼Travelguide writer) says on Jun 21, 2009, 15:44: The chicharon de cuajada is a speciality of Somondoco, unique to here. Some people are no sending it to Bogota to sell also. There is absolutely no comparison to chicharon. It is a sweet. You take pieces of very fresh cuajada ( only a few hours old) and boil it in melado for about 30 minutes. Mr. Bill Somondoco 0 funny, 0 helpful. |

Man Tequila says on Jun 21, 2009, 17:52: Jam sugar contains citric acid and pectin. It is different from caster sugar (a superfine sugar used for baking) and normal sugar in a grinder.
