If I follow theses instructions ( What does it make ? ) Colombia 101

Ingredients
1 1/2 quarts chicken stock
1 yuca root , peeled and cut into 1 inch cubes
2 plantains , peeled, halved, and sliced into thirds lengthwise
2 red potatoes , peeling optional, cut into chunks
3 whole skinless chicken breasts , quartered with bones left on
2 lemons, juice of
1 teaspoon cumin
6-8 scallions
1 bunch cilantro
to taste salt and pepper , to taste.
Directions
1In one cup of the chicken stock, simmer the scallions, cilantro, and cumin for 5 minutes. Set it aside until it is cool, then process in a blender or food processor until you have a smooth, green-colored puree to be added to the final soup.
2In the remaining 1 ¼ quarts of chicken stock, simmer the quartered, skinned chicken breasts. Skim off the scum that results and discard. The chicken will take about 1 hour to cook.
3As the chicken is simmering, add the cut up, peeled yuca, and the cut up potatoes. Continue to skim off the scum after the yucca and potatoes are added.
430 minutes prior to the end of cooking, add the cut up plaintains.
510 minutes before completion of the cooking phase, add the processed scallions-cilantro-cumin mixture and the juice from the 2 lemons.

Hmm. Thanks for the link DD. My wife's only major fault is that she can't cook to save her ass. I told her I am going to send her to stay with my mom for a while so she learns how to cook Colombian food.

Yes, I have never used any Roux to thicken my sancochos; I've never seen anybody else do it either. That's why I remember that recipe so well. Sometimes when you cook a big pot of sancocho and save some for the next day (sancocho is like the frijoles, always tastier the next day) the soup is so thick of starch that you almost need a knife and a fork to eat it.

I don't think I would like it with the roux, never heard of such a combination in Sancocho, the best Sancocho de gallina i have ever had was in Cali, they use cimarron cilantro as one of the flavoring ingredients and it is bloody delicious. I love Ajiaco and Puchero Bogotanos at Casa Vieja in Bogota. But the best of all of those...I cook them myself!!!

but have not been able to eat them for a while, you can not find most of the good ingredients where I live. Bummer

LOL ColGringo, I'm Finnish...but I cook a mean sancocho whenever I can find some great, fresh platanos. The local supermarkets have been importing platanos from Colombia and yuca from Costa Rica, cilantro is found in every food store but cimarrón is the one herb I have not found anywhere else than in Colombia. I agree huskie, sancocho valluno is the best kind.
