Dear Paisas: Please do not put shredded cheese in your fruit salads

Dear Paisas: Please do not put shredded motzarella cheese in your fruit salads. This applies especially to fruit salads that have ice cream in them. Also, while you are at it, don't put chunks of cheese in your hot chocolate.

How about that..I bought a very small Ice Cream shop in Itagui this past year. When I took it over I proceeded to reprice the menu and do cost analysis. The first thing that stood out in my cost was ...you guessed it..CHEESE..I said wtf is all this cheese? I soon learned that they ate everything with it..and not just a sprinkle either..Ice cream with shredded cheese, fruit salad, Copa, ..everything.
It was so that it pushed the food cost way up..I to do something so I attempted to begin portion control methods and that went over very badly. I then decide to atleast raise the price to accommodate the cost..and again they flipped out...I got so frustrated trying to figure out the whole thing not just the cheese..I sold the damn place..

thats the way the cook their food, you can politely ask them not to put cheese on yours, but would you like some colombian telling you how to make your food inthe US? you cant expect everybody to change the way they cook their food since thats the way they liek it, in my case costenos never put cheese on salads, but i wouldnt go to Medellin expecting them to change their menu just for me lol

Seriously, LEMON, the buy was 2500 inside the plaza which is actually high rent for the area.
The plaza does not get the customers that you would think being it in Itagui. Many fellow business owners and people with money go there to shop because of the uniqueness. I would not have one out on the street in Itagui thats for sure. The frustration was not only with the pricing but the cultural thing as well.

As for the original plea: it will never work. Cheese can tastefully be added to many things, and they won't stop doing it just because a few gringos whine about it.

And papiChulo has a point: people should try embracing the colombian culture more if they intend on living there or being there for extended periods of time: starting with a 1st grade grasp of the language, which most non-latin foreigners in Colombia sadly don't have.

cachaco food is tasteless and bland, them modefoques don't know from spices.
i spent 3 weeks in a cachaco household in el poblado. I never craved for a popeye's spicy chicken so much as i did after i got outta there.
first of all i don't eat dark meat, i like my meat white just like my women.
them modefoques just threw them disgutin chicken legs on the skillet with out a single grain of salt, pepper, sason, NOTHING!!
I thought they were just saving on spices to maintain their lavish lifestyle, maybe that.
anyways, you wanna a real arepa, there;s a guy on 72 st barranquilla that will put chicharron, butifarra, chorizo, pollo cuanta mierda quieras in that arepa. I take mine with spicy butifarra.
As for the best food in the world MEXICAN ALL THE WAY, with no close second, ok maybe jamaican.

Its what I like to see..it warms my heart that the Colombianos have all rallied and stood up for their cheese ! Bravo ! The Ice Cream shop I had was not quite a failure..I bought it from a Fellow cheese eater that was ..well..eating the profits..! I got so frustrated trying to understand the cultural thinking about MILO (Chocolate Milk) and the addiction to it... I just sold the place before going postal...So what I did was I beefed up the cheese inventory and attracted loads of fellow cheese eaters that came in smelling around and BINGO...netted well, not a handsome profit but enough to put into my other profitable and much smarter business in a neighboring country!!!
I'll just stick with Tapping into the Natural Resources of Colombia for the time being !

Today, I had lunch at a small Filipino place in Culver City called Kabahayan. It's located at the southeast corner of Venice Boulevard and Madison/Clarington, in strip mall, tucked behind a Thai BBQ place. Various Filipino dishes are displayed in steam tables; you can get two or three entrees with rice, and soup. The food was pretty good; I had a very tasty and succulent pork adobo with grilled fish and rice, and a bowl of soup that was a clear broth with some bok choy and stewed meat. There is a small grocery section with Filipino snacks and sundries, and a freezer with meats, seafood, ice cream, and red beans. My eye caught a flavor of ice cream labeled "quezo real," which means cheese ice cream, folks. Yup - the description below the name says "Ice cream with real cheddar cheese bits." Well, I just had to try this out, so I bought it and took it home. I tried it, and you know, it's not as bad as it sounds. It tastes a lot like french vanilla, except your tongue will feel a strange texture in that mouthful of cold, creamy smoothness that's just not supposed to be there. As you bite down on these little rubbery rectangles your tongue has discovered and taste a familiar sharpness, you realize - "Dude, there's cheese in my ice cream!"

Formaggio Gelato, or Cheese Ice Cream: Though one might expect cheese ice cream to be innovative, I have found it in a number of cookbooks, including some older ones. It's the perfect cheese course with which to end a meal on a hot day, and with a good slightly chilled dessert wine will be sublime.
Prep Time: 40 minutes

Ingredients:

A chunk of Grana Padano or Parmigiano (or other crumbly cheese if you prefer)
Cream
Preparation:

Begin by grating 1 pound (450 g) Grana Padano or Parmigiano Reggiano. Combine the grated cheese with a quart (1 l) of cream and season the mixture with a pinch each of salt and pepper. Heat the mixture over a moderate flame until it becomes uniformly creamy, then remove it from the fire, let it cool, pour it through a strainer, and when it has cooled transfer it to an ice cream maker to make it into ice cream.

Note: Though it's not an Italian combination, I think this would go quite well with apple pie.

The wine? A Recioto would be nice, as would a Picolit or a sweet Vinsanto. Or a Moscato di Scanza, or a Moscato di Pantelleria, or a Moscato Rosa.

If you cook with tomatoes, cilantro, salt and pepper, you don`t need any more spices, you can, but that is Colombian food.

What I've noticed about arepas is they are never eaten plain. They, Colombians, always top them with something. Salty cheese, butter or some sort of mild salsa etc. I really don't think they eat them plain because as we all know they taste like cardboard. Lisa Zee's comment "AREPAS ARE OUR BREAD, TO EAT WITH FOOD!" makes perfect sense. I also realize there are different variations of arepas and not all taste like cardboard. Personally I enjoy the arepas de chocolo up at La Cantaleta on the way to Llanogrande.

I agrEE with Lisa ZEEEE - Bread and butter, arepas and butter. Or quesito. I eat about 5 a day. My pee smells like arepas.

I still have yet to see a foreign owned business (other than the hostel/hotel biz) make it. I think the cultural differences are really inhibiting and no one ever takes that into consideration.

If you saute them you just made "ogao" put that on a Patacon or inside of an arepa, or on arepa and you got a testy snack.
