In Spanish or in Colombia they called it Consomé.
Consomé (del frances consommé) m.
Especie de caldo muy sustancioso, hecho de ternera, pollo y otras carnes. También el dicen caldo.

I like “consomé de pollo with just a little bit of chopped green onions, cilantro and garlic for richer flavor. Caldo is usually very clear.

This is the only picture I found, I tried to find one with chicken parts but no dice.

Caldo de gallina

But, I'm going to start making some assumptions here.... Which means I might actually end up making an ass out of myself ..........Thu 04 17, 2008 11:34 am

Monpirri says on Jul 23, 2007, 02:16:

O caldo de gallina, la gallina tiene un sabor mucho mejor que el pollo.

Desideria (Moderator) says on Jul 23, 2007, 02:24:

One of the best meals I've had was a humble plate of consomé (de gallina) at a modest home in barrio Junin in Cali, just before Christmas, half a lifetime ago. A tiny piece of meat but mostly just caldo, green onion, garlic and fresh herbs. It might've had one small potato in it, I'm not sure any longer.

Cheers,
Desi

I had a wicked hangover on Sat and my husband said he used to have 'sopa de vena de toro' for his guayabo. I'll let you guess what the 'vena' is.....

"Sopa de vena de toro" I never heard that. I heard that in Ecuador they make "sopa de huevos de toro" Have you tried that one???

Once I had a slight hangover in Colombia and I had that caldo that has egg in it, is it called changua? It did the trick I must say, it was very nice...

I love changua it's a very simple and tasty caldo.

Viviana La Colombiana says on Jul 23, 2007, 04:24:

Changua, Ajiaco, o Caldito they are all great for hangovers. I gotta say, I still go to Mami's house when I need a fix! : )

larumberainglesa says on Jul 23, 2007, 04:50:

Well I wouldn't try any of them cos I don't eat meat! My husband will eat anything (except pizza!!!) but the vena is the main bit, not the balls!

kalder says on Jul 23, 2007, 04:52:

Nothing could cure the hangover I've got :(

Viviana La Colombiana says on Jul 23, 2007, 05:13:

You can still have caldito de papa it doesn't have any meet and it still does the trick. And to thanks on the "vena" : )

jaramillo says on Jul 23, 2007, 05:35:

Consomé should have no solids. Other than that, chicken feet in the cooking process add great flavor and a more gelatinous texture. Resucita muertos, como dijo alguien.

Monpirri says on Jul 23, 2007, 05:47:

Consomé with papitas with or without few chicken wings, Mmm

Lowell says on Jul 23, 2007, 07:09:

Do they make menudo in Colombia? It's suposed to be good for a hangover. That is if you like cows intestines.

Alfred E. Newman. "What. Me Worry?"

Lowell says on Jul 23, 2007, 07:13:

Some of the chicken I buy here has the visera (heart, liver,feet...). Sometimes even the head. I never much like chicken livers and gizards (sp?) until cooked/fried Colombian style.

Alfred E. Newman. "What. Me Worry?"

Lowell says on Jul 23, 2007, 07:14:

Now ET can't phone home unless he only lost one hand.

Monpirri says on Jul 23, 2007, 07:36:

in Colombia they make Modongo. You can buy it in the states for about $2.50 for each can.

Pardon my ignorance ... But is the chicken part in the photo Arthur posted a foot?

Just curious. (And I'm southern, so I'm fairly used to oft neglected animal parts ending up as dinner)

Man Tequila says on Jul 23, 2007, 15:19:

It looks like a foot.

The thread was originally titled "consume". I already do!

That's OK. If ET had to be killed, I am heartened that they did not waste any part of him.

My mother used to make tripe stew. We loved it, but of course she never explained what tripe was. Chicken feet in the soup makes for a good broth. Hmmmm...what's with all the food photos on the board today?

Hawaii is Spam's best market? I would NEVER have guessed that - but I guess it makes some perverted sense, since so much has to be shipped in...I heard an NPR piece recently on some town having an anuual Spam festival - I laughed so hard I had tears in my eyes. You would have thought those guys were discussing fliet mignon - but I'm pretty sure they were just yanking chains.

When I was in Cartagena, I passed a place that smelled just like my grandmother's house when I was a child- and she was cooking chitlins. I ran - before I got nauseous. jajajaja
