Colombia and Limes are Happy Together!

Su majestad el Limón Verde!

Not too long ago there was a bunch gringos and a mexican amigo from here were trying to play Conquistadores in Colombia, they wanted soo bad to bring to Colombia their new delicatessen, the yellow lemons. One even claimed that yellow lemon is better with fish.
What a NONSE! But who am I to say so? Let’s listen to the ones who really know.

Seleccionador de Limones

A hi tech device picks up the Limes.
“selecciona los limones por color y tamaño..se seleccionan solo los limones verdes y se desechan los limones amarillos, ya seleccionados se distribuye por tamaño..”

The Machine picks up the limes by color and size…Only limes (Green) are picked up and the yellow lemons are discarded, once they are selected they are distributed by size.

COCINA COLOMBIANA

Mojarra Frita

Porciones: 4

Ingredientes:
- 4 mojarras
- Jugo de dos limones
- Sal y pimienta
- ¼ taza de leche
- ¼ taza de harina de trigo
- Aceite para freír


Preparación:
Lave bien los pescados y séquelos. Báñelos con el jugo de limón y rocíe con sal y pimienta. Deje reposar así por lo menos 15 minutos.
Disponga la leche en un recipiente y la harina en otro. Sumerja los pescados en la leche primero y luego pase por la harina, asegurándose que queden perfectamente cubiertos con la harina.
En un sartén grande, caliente abundante aceite y fría en él las mojarras hasta que hayan dorado bien por cada lado.
Sirva acompañadas de patacones de plátano verde y ensalada mixta.

You can use limes in many dishes to make them better. I like squeezing lime on freshly caught fish from the coast, it makes it more flavourful. Limes were quite prevalent in Colombia, bizarrely enough.

You are correct ManINred, limes have been part of Colombia for centuries and they still are. Yesterday while looking for nice video of papitas criollas I found a corny video about how much Colombia loves limes.
But I think they went too far when they added or complemented papitas criollas with lime, I personally would not use lime on papitas criollas, just salt and aji picante would do it.
