Chicha Recipe

Preparación

Se tuestan un poco, una o dos libras de maíz amarillo, se cocina muy bien hasta que esté blando y en seguida se muele. Luego se desata en agua, se cuela para sacarle el residuo del maíz y se echa en una vasija de barro o de madera con el melado frío suficiente para endulzarlo, clavos de olor, canela y hojas de naranjo tiernas. Se tapa y se deja fermentar tres días.

Preparation

Take one or two pounds of yellow corn, cook very well until soft and mash immediately. Then rinse it in water and strain it to remove the corn shells (?). Pour into a clay or wood pot with sufficient cold sugar syrup to sweeten it, mix in cloves, cinnamon and some grated orange peel(?). Cover the bowl and let it ferment for three days.

Arroz con pollo - as also requested in PM Arroz con pollo

Tiempo de preparación: 1 hora

Porciones: 12

Ingredientes
3 cubos de caldo de gallina
4 cucharadas de aceite
1 cebolla cabezona rallada
2 tomates pelados y picados
1 hoja de laurel
1 rama de tomillo
2 diente de ajo triturado
1 taza de arveja desgranada
1 taza de habichuela cortada
1 taza de zanahoria pelada y picada
4 pechugo de pollo cortadas en trozos
Sal al gusto, pimienta y comino.
2 tazas de arroz

Preparación

En una olla al fuego calentar el aceite y sofreír el pollo junto a la cebolla, tomates, ajos, laurel, tomillo, pi mienta, comino y color. Dejar conservar por unos minutos, e incorporar el agua, los cubos de caldo de gallina y las verduras. Dejar hervir agregar el arroz prelavado. Cocinar hasta que seque, tapar y continuar la cocción a fuego lento hasta que esté listo el arroz.

Rice with chicken

Time of preparation: 1 hour

Portions: 12

Ingredients

3 chicken broth cubes
4 tablespoons of oil
1 large onion grated
2 tomatoes peeled and minced
1 bayleaf
1 branch of thyme
2 cloves of garlic crushed
1 cup of beans/vetch/peas shelled (??)
1 cup of cut beans
1 cup of carrots peeled and grated
4 chicken breasts cut in pieces
Salt al flavor, pepper and cumin.
2 cups of rice

Preparation

In a pot heat the oil and fry the chicken with onion, tomatoes, garlic, bayleaf, thyme, pepper, cumin and salt. Let it rest for some minutes to cool down, add water, the chicken broth cubes and the vegetables. Bring to a boil then add the pre-washed rice. Cover and let is simmer until the rice is done.
