In Cartagena, in the old tow, there is a shop that sells chicha, can you believe it! in Cartagena, and the funny thing is you take your own bottle and the fill it up, i personally don't like chicha nor masato, but my dad love it, so every morning while we were in Cartagena he was taken his two litter Coca cola bottle to be filled up

I think El Taller in La Candalaria was where I tried it. It's pretty grim stuff though. Taste like alcholic vinegar, depends what you're into!
The bar's pretty cool though in that its old and small and has plenty of character.

Sabe alguien aqui como se prepara la chicha? Que barbaridad lo que dice la gente que no conoce la cocina colombiana.

I have tried only the corn chicha with pineapple skins, the drink tastes like pretty good and it's very refreshing, but like the comment above not everyone knows how to make good chicha!

De acuerdo a lo que he odio y leído, se hace de maíz masticado por alguien como catalizador para la fermentación. Me consta que existen algunas variedades que no las hacen así, pero este tema se trata de la tradicional, no?

He comido cualquier cantidad de locuras en Colombia y la mayoría resultaron sabrosas, pero esto no me llama la atención en lo mínimo. Eso si, el que le guste que lo disfrute.

Si usted está en el centro de Bogotá y quiere ir a Monserrate (aproximadamente 3.130 m.s.n.m), le recomendamos que vaya temprano, suba a pie hasta el ingreso y tome allí el Funicular o el Teleférico. Normalmente le dicen a uno que tome un taxi hasta allá, porque el acceso es un poco lejos, pero en realidad es algo decepcionante montarse al vehículo y llegar a pocos minutos (aclaro que los taxista son muy formales). Esta fue nuestra primera mala elección.
El precio del tiquete es de 6.300 pesos, pero por economía se ofrece un tiquete de ida y regreso en 12.000. Como era nuestra primera visita y nosotros somos tan economizadores, pagamos los 12.000, por ahorrarnos unos pesitos. Esta fue nuestra segunda mala elección. Como somos “jóvenes aún‿, pudimos haber bajado a pie, pues al parecer el camino es todo un parche, se recorre sin parar en menos de una hora y en él se encuentra uno de frente con la gente, las artesanías y otras comidas, y digo otras, porque arriba detrás de la iglesia del Señor Caído de Monserrate también hay una ruta especializada en ellas.
La chicha. Ya varias personas nos habían recomendado tomar chicha en Bogotá; en el cerro se dio la oportunidad. En la ruta de las comidas nos pudimos encontrar grandes vasijas de barro con Chicha y Guarapo. La chicha, para los que no lo saben es una bebida fermentada de maíz, deliciosa y refrescante. Allá el vaso cuesta 1.000 pesos y es tan espumeante como una buena cerveza, tiene una densidad interesante, que creo que podría llamarse cuerpo y un sabor parecido al que queda en la boca luego de unas cuantas cervezas. Aunque ya habíamos tomado Chicha en otras partes, esta nos encantó. Bueno, al parecer nuestro tercer error fue pagar mil pesos por el vaso de Chicha, pues un amigo de Bogotá se río de nosotros al decirnos que el precio era de 500 pesitos…
Eso de la planta no importa, finalmente la relación costo beneficio fue mejor y el vaso de chicha estaba grande…
Dejo aquí porque no quiero quemar todo el rollo de Monserrate en un solo post.

Especially on "dia de las almas" which is every Monday people line up to worship the guy, putting down flowers and whispering into the statues ears hoping for economic wealth. It´s brilliant! Segundo, quien dijo que le había oído eso a un gringo? De que yo haya escuchado en COLOMBIA, la chicha tradicional de maíz se hace con una masa que consiste de granos de maíz masticados. Después la fermentan. Como dije, podrán existir otras variedades que no sean así, pero la tradicional así la hacen y eso me parece desagradable. Me refiero específicamente a ese método de hacerla.

De cualquier manera, si no se me da la puta gana probarla, eso es cosa mía. No bebo alcohol normal para irme a tomar semejante vaina. Tampoco tomaría whisky hecho en casa.

HISTORIA DE LA CERVEZA EN COLOMBIA
En este periodo la mayoría de las pequeñas cervecerías y algunas medianas se han ido cerrando o han sido compradas por las nuevas grandes empresas. También se comienza la primera gran batalla contra la chicha y el guarapo, con una fuerte la alianza entre Gobierno Nacional y las grandes cerveceras. Estas bebidas de fabricación casera, que eran consumidas por la gran clase obrera, campesina y humilde, se habían convertido en pequeñas industrias caseras. Las cerveceras estaban muy interesadas en conquistar su mercado y el gobierno de la nación en acabarlas por la imposibilidad de poder cobrar los impuestos reales a las chicherías. Igualmente, el Gobierno buscaba la forma de erradicar el consumo de estas dos bebidas por la falta de higiene que se tiene el proceso de fabricación, generando en la población diferentes tipos de enfermedades y además el consumo desmesurado podía producir trastornos físicos y mentales.
Se calcula que para más o menos 1910 existían solo en Bogotá 45 chicherías que podrían producir 35.000 litros diarios de chicha, mientras las cervecerías de Germania y Bavaria solo producían 6.000 litros diarios de cerveza.

Maybe not "modern" Colombians in the cities, but I guarantee that in small towns and rural areas, there are still people making this stuff the old fashioned way.

Oh please. I actually asked a few of my relatives in Colombia about it tonight and was told that the traditional stuff can be had although the more modern methods prevail. It is primarily made by "indios", but not necessarily just the ones in the sticks. Like I said, it is not really like they just spit in the pot. They chew corn kernels into a mash and use that as part of the process.

I bet you, they have never seen how chicha is made, but I have, and even worst they have never taste one. Chicha comes in different flavors and a chicha drink doesn’t have to be alcoholic. This natural and refreshing beverage can be found easily in Monserrate! Yeap, right there in a tourist area in Bogota.

La "ptialina" o fermento natural de la saliva ayuda a que el proceso de fermentación del preparado se acelere. To compliment your story, I saw on the net, in that page where anyone can edit a story that in one country, well that’s what the story says, corn was or is processed the same way as you have described above, but since I do not consider myself any better or different from our Latin American brothers I would rather not mention the country that used prepare corn the same way you have spelled out here. Boy, the Internet could do wonders for some and it can also do the same as chicha used to do to human kind, according to the experts of that era in Colombia.

Aquí va esto:

Chicha es el nombre de una variedad de bebidas alcohólicas derivadas de la fermentación del maíz y otros granos originarios de América, pero también de frutas como manzanas y uvas. Son bebidas en toda América Latina desde antes de la llegada de los españoles. Por lo general es una bebida suave, de no muchos grados alcohólicos.

El termino Chicha también es utilizado en otros paises de América para referirse a una bebida a base de arroz, sin grados de alcohol, por ejemplo la Chicha Venezolana.

Usualmente la chicha se prepara mediante la fermentación del caldo concentrado del cereal usado (generalmente maíz). Esta sustancia se conserva en envases herméticos y se espera su "maduración".


CHICHA DE MAIZ MORADO
1 kilo de maíz morado
18 Litros de agua
2 Cortezas grandes de canela
3 Cucharadas de clavo de olor
1 Puñado de guindas, guindones, orejones y abridores(frutas secas)
4 Puñados de cáscaras de piña,
½ Chancaca o azúcar,
4 Limones,
½ Cucharada de canela en polvo.
Se pone a fuego un perol con el agua, con el maíz y sus corontas, las cortezas de canela, una cucharada de clavo de olor, las frutas secas y la cáscara de piña; se deja hervir hasta que reviente el maíz , después se cuela y se le echa la chancaca, el resto del clavo de olor, canela en polvo y el sumo de 3 ó 4 limones; se deja enfriar y se sirve.

CHICHA DE MAIZ BLANCO
1 Raja de canela
1 kilo de maíz blanco
1 kilo de azúcar
15 Litros de agua
1 Cucharada de clavo de olor

El maíz se pone a asolear; al día siguiente se muele y se pone a hervir en un perol con el agua, junto con la canela y el clavo de olor, se ueve con frecuencia para que no se queme, tiene que hervir cinco horas; después se cuela por un tocuyo y se deja asentar; al día siguiente se vuelve a colar y se echa en un recipiente de barro con el azúcar; se tapa y se deja fermentar por tres días. Antes de sacarla se mueve y si está muy fuerte se le echa azúcar y agua al gusto.

CHICHA DE JORA
200 Gramos de maíz blanco entero
2 Cucharadas de clavos de olor
18 Litros de agua
1 1/2 Kilo de chancaca
100 Gramos de quinua
1/2 Kilo de maíz amarillo ó 1/2 kilo de jora.

Se siembra superficialmente el maíz, el terreno debe de estar algo húmedo y cuando comienza a brotar se recoge colocándolo al sol por unas horas, después se muele, esto es lo que se llama JORA. también se puede colocar el maíz sobre costales humedecidos hasta que brote.

La jora se pone a cocinar en un perol con el agua, los clavos de olor y los demás granos; no se puede dejar de mover porque es muy fácil de quemarse, se deja hervir por 8 horas, agregándole agua cada vez que se consuma, después de esto se cuela con una tela gruesa como el lino o yute, se deja enfriar y se echa en una vasija de barro con la chancaca; se tapa y se deja fermentar ocho días. Se mueve una vez al día. Al sacarla se prueba y si le falta dulce y está muy espesa se la aumenta agua y azúcar rubia al temple que se desee. Si desea que la
fermentación sea mayor deberá dejarla más días.

Chicha, an alcoholic drink made from fermented corn and pineapple. Get some carbs, vitamin C, and a buzz. Very potent and very tastey. Wine by the glass was hard to find in Colombia. Chicha was a change of pace from cerveza (beer).
