cheese for pan de bono

Hola. Does anyone know what kind of cheese is used to make pan de bono? Specifically, what kinds of cheese can I get in the US that would be equal or similar? We are near Chicago, if that helps. Gracias.

The mexican "queso fresco" works good for pan de bono. You can find it anywhere.
