Bone soup

Or Consomé if you prefer.

I have had bone soup a couple of times in Colombia and it was pretty tasty. I bet most of you didn't know that I'm a pretty good cook and that I really enjoy making colombian food.

Well anyway I was thinking of making some bone soup today so I open my colombian cook book to the soup section and this is what I found for the list of ingredients for bone soup:

2 nabos medianos
2 zanahorias medianas
2 puerros
1 rama de aprio
2 cebollas cabezaonas blancas
3 huesos de res or ternera
1 PATA DE POLLO !!!
1/2lb de carne de res en trozos
2 claras de huevo
Sal

Now my question is: Why would anybody throw a chickens foot in the pot? And if you are going to throw one in why not make it two? Do you think I could get away with throwing in a chicken wing or leg in instead of the foot.

Chicken Foot! UGH! Wait until you are presented with a Chicken foot on a plate as the guest of honor, and everyone is waiting for you to start eating so they can (This was in Italy- not Colombia). Not a pretty sight!

PS It's in the soup for flavor. Chicken **** has a unique flavor.

chicken foot is common I have seen it used in many Southern European recipes for consomé. Normally it is taken out before served, but some make it a point to show it off, telling everybody the cook knows how to make consomé. Yes, it is for flavor, you don't eat it.

For the Chinese it is different. I got a chicken foot glazed in ginger sauce while eating Dim Sum. The Chinese friends who had invited me nodded appreciatingly when I started gnawing the rubbery thing. Not something I want to repeat again. YUCK! But I assume it is a way to show appreciation when invited ....

Chicken feet are sold at a lot of supermarkets in the southern US too, along with dilicasies like hog nuts, can even get tripe in a can. mmmm!
