My fiancee had her interview yesterday and she described the interview as follows:
She was asked my name, what do I do and how we communicate (emails and chat) - she showed them copies of 8 or 10 emails and print-outs of 4 or 5 chat transcripts (yahoo messenger.) She told them she uses online translation (freetranslation.com) - we mostly chat in English and sometimes we use a little Spanish - I am way too weak in Spanish; she was asked about her planned wedding - civil or Catholic (civil wedding for us - I am an atheist.) Her interview was in Spanish. She paid for the visa (She didn't ask to pick it up same day as she is taking a trip to Cartagena next week with a friend and she is planning to fly here in mid August - no hurry.) She repeated that it was very easy! Oh! She went to the embassy at 6.15 to be pretty early - she was done before lunch! Another couple that were there just 5 minutes later ended up at the end of the line - Monika was the 2nd for the K1 interview.
Total time taken from petition to visa - less than 5 months! (petition received by Nebraska March 2 - visa on July 21.)
I was not there for the interview as I decided that it wasn't worth the time and money spent - and she agreed after talking to some of her other friends who had gotten their visas. It seems they rarely ask anything of the USC and seldom anything significant - I would agree that if you have a complicated case or if she is uncomfortable being alone at the interview or insists for you to be there then its good to be with her - I would have given in also! I live in Colorado - so my flights are around $850 - much more expensive than from say Florida. We will just use this on our trip to Orlando, or Vegas or Anaheim or on Aguilas!
My advice - don't worry too much - relax - as long as you have the documents and enough supprting stuff, relax and take it easy! (JAJAJA Easy for me to say!)

I visited her nine times and spent a summer with her, since I am a college professor I have a lot of time off. We were married March 12th in Colombia and I sent in my I-130 on March 20th. I just received its approval from the CSC last week. Hopefully my wife will get her interview in September. It is really starting to get tough. Nearly five months since the wedding and still not sure when she will be here. Anyway, goood luck.
