The ATM is probably the best rate, and the easiest. But, make sure you notify your card provider that you will be in Colombia, otherwise you may be denied.

American Express is accepted at BanColombia.

Deposit your money in your US bank account before you go and simply use ATMs as sloop suggested. The casas de cambio are a huge ripoff.
