It is the one item I always have as soon as I arrive in Bogotá. My relatives there know of my love of the stuff and some or all of them will prepare it at least once for us before we leave.

It is usually full of chicken.

Actually really good Ajiaco is a potato based soup with chicken in it. It is actually REALLY good. The white stuff on top is a heavy cream that gives it a richness but you can get it with or without the cream usually (If you want it without just say "Sin crema"). The plate next to it has rice, salad, avocado and a patacon (fried plantain). A lot of people will put the rice and avocado into the soup. The plantain is really good with either a little bit of salt or, if you can get it, hogao (a cooked mixture of onions, green onions, tomatoes, salt and cumin) I would definately try it if you get the chance.
