Candy stand on a typical PLAZA????? What is this stuff called???

On my last trip to Medellin I was at a plaza, I cannot remember which one. There was a stand with a man beating and stretching this candy like taffy on a wooden pole. It looked like it was pizza dough but it was not, it is candy or taffy. My Medellin friends told me it was a part of a cows leg or something, and by beating it for so long it turns into this stretchy candy. I cannot remember what the name of this candy was????
