Bill, What ever temperature water boils at at your altitude is the temperature you want in your baked goods. Salt is a yeast retardant so bake with a little salt and little less sugar. Here's a good little recipe for English Muffins baked in a skillet or on a griddle. English Muffins - Skillet version 1 cup milk, warm 1 1/2 tablespoons butter 3/4 teaspoon salt 1 tablespoons (7/8 ounce) granulated sugar 1 large egg, lightly beaten 2 cups Unbleached Bread Flour 1 teaspoon instant yeast Mix (I use a food processor) or by hand and transfer the dough to a cornmeal-sprinkled surface and roll it out until it's about 1/2-inch thick. Cut out circles with a floured 3-inch cutter. Re-roll and cut out the leftover dough. Cover the muffins with a damp cloth and let rest for about 20 minutes. Heat a frying pan or griddle to very low heat. Do not grease, but sprinkle with cornmeal. Cook four muffins at a time, cornmeal side down first, for about 7 minutes a side. Check after about 3 to 4 minutes to see that the muffins are browning gently and are neither too dark nor too light; if they seem to be cooking either too fast or too slowly, adjust the temperature of your pan or griddle. When the muffins are brown on both sides, transfer them to a wire rack to cool, and proceed with the rest. If you have two frying pans (or a large griddle), you'll be better able to keep up with your rising muffins. Yield: 8 muffins. Enjoy!

Whiworry, You ae correct about the fact that dealing with woman of the latino culture is going to be a challenge. I've been married to a Colombiana for 7 years and misunderstandings still arise regularly. Sharing a common language is not a cure for this. It's a culture difference. When you marry a Colombiana, you marry her entire family. Family is first and foremost with a Colombiana. When you understand her culture, you'll understand how to deal with the misunderstandings. You, Sir, are going to have to change your way of thinking or cancel your marriage plans. Allow her to import her culture with her or your headed for disappointment. Good Luck! It's a struggle, but it's worth every minute of it!!

"bake covered for 1 1/4 hours or until rice is tender" refers to the fact that not all ovens cook at the same rate even though the temp is set at 350 degrees. The liquid needs to dissipate. ( 75 min works for me) The total drainage from the corn, black beans & tomatos water = 2 3/4 cups But hey, you can experiment with the baking time in the oven. Whatever works for you.

Zucchini A La Boomer 2 1/2 pounds zucchini, washed /sliced /not peeled 1/2 cup green pepper diced 1/2 cup onion chopped 3 tablespoons butter or margarine melted 3 large tomatoes chopped 3 tablespoons all-purpose flour 1/3 cup sugar 1/2 teaspoon cayenne pepper 1 1/2 teaspoons salt 1/4 teaspoon pepper 1/2 cup bread crumbs (any flavor) 1/2 cup cheddar cheese shredded Cook zucchini in small amount of water in a covered saucepan about 8 minutes. Drain and place zucchini in greased 2-quart casserole. Saute green pepper and onion in melted butter until limp but not brown. Add tomatoes, sugar &cayenne pepper; sprinkle with flour and stir well. Cook an additional 2 to 3 minues or until vegetables are tender. Season with salt & pepper. Spoon mixture over the zucchini. Combine crumbs and cheddar cheese and sprinkle over casserole. Bake at 350 degrees F. for 30 minutes or until cheese is melted and mixture is bubbly. Goce!!!

You can add browned ground beef to the "Arroz con Tomate De Lujo" recipe and use it for a one dish meal! It's great that way! I even make this in a rice cooker (quick & easy)

Hot & Spicy Salpicón de Pescado 2 pounds fish filets (any white fish) we use Mojarra cooking spray 1/2 cup minced onion 1/2 cup bell pepper (green, red or yellow) diced 1/2 jalapeño, seeded and minced (1 if small) 1/4 cup chopped fresh cilantro leaves 1 tablespoon extra virgin olive oil 1/4 cup lime juice 1 tablespoon Worcestershire sauce 1 can tomatoes, diced 2 cloves garlic, crushed and minced 1/3 cup sugar 1 tablespoon chili powder Salt and pepper to taste (Pinch of cayenne pepper optional) Preparation: Season fish with salt and pepper. Place a heavy nonstick skillet over medium heat; spray with cooking spray. Gently sauté fish, turning to cook both sides, until fish flakes easily with a fork. Remove from the pan and set aside to cool. Shred (and debone) fish by hand and place in a bowl and set aside. In same skillet, combine onion, jalapeño, bell pepper, olive oil & garlic. Sauté until tender. Add lime juice, worchestershire, tomatoes, sugar, chili powder, cilantro and salt & pepper. Cook over medium heat until it starts to bubble, reduce heat to low and simmer 10 min. Add shreaded fish and simmer 5 more min. Serve warm over white rice with a side of yuca topped with sour cream & a tall glass of lemonade.

Arroz con Tomate De Lujo 1can corn - drained (save liquid) 1can black beans -- drained (save liquid) 1/2 cup green bell pepper -- chopped 1/2 cup onion -- chopped 1 clove garlic -- minced 1/2 teaspoon dried basil -- crushed 1/2 teaspoon dried rosemary -- crushed 3 tablespoons olive oil or veg oil 1 1/3 cups long grain rice (Not minute rice) 1 1/2 cups tomatoes -- chopped or (1 can) -- drained (save liquld) 1/2 cup brown sugar 1 1/2 tablespoons worchestershire sauce 1 1/2 tablespoons chile powder 1 or 2 small jalapeños or chile peppers seeded & diced (As you like) 1 teaspoon salt 1 teaspoon cilantro -- chopped 1/2 teaspoon black pepper 2 3/4 cups liquid -- (from corn, beans, tomatoes, water) 350 degrees -- pre heated oven In a skillet, sautee green pepper, jalapenos, onion, garlic, rice, basil and rosemary in hot oil until rice turns golden brown. Empty skillet into a lightly greased baking dish, add remaining ingredients, stir, bake covered for 1 1/4 hours or until rice is tender.

Way back in 02, my wife and I applied for her visa in Bogota. We were married in Colombia so it was direct Consular filing. Somehow her paperwork "got lost" at the Embassy. For the next six months I fought with the Embassy to find their "misplaced" paperwork. Even resubmitted paperwork to no avail. Finialy, I fired off an e-mail to one of my US Senators. To my suprise he responded to me the next day saying he would look into the matter. He even sent me copies of all his correspondence with the US Embassy in Bogota. The Embassy told him to mind his own business and take a hike. They didn't care who he was and he didn't have any say over how they conducted their business. This definately Pissed Off this US Senator!! Good for me, Bad for the US Embassy in Bogota!!! This Senator contacted the US Secretary of State's office and expressed his displeasure. The next fricken day the Assistant Consular General called my wife personally and said they mysteriously found her missing paperwork and her visa was ready to be picked up. When my wife arrived at the Embassy to pick up her visa she was met by and appoligized to by the Consular General office and not the run of the mill window pricks. She said the window pricks were peeking at her form down the hall. US Senator (name witheld) definately shook'em up! All in 1 week!!!

Ran into a simular problem with my wife 6 years ago. It's largely a State licensing issue. If degree wasn't obtained in USA, It's basicly worthless. Seems to be some sort of protectionisum by US medical universities. The want their tuition money! Get out your check book. Good Luck

Arroz con coco (quick & easy version) 2 tablespoons veg oil 3 cups long grain white rice uncooked (Not minute rice) 2 1/3 cups water 1 cup "ceme de coco" (coco lopez brand) here in the states 1 cup coke (or any cola) 1 cup raisins (white or dark) 1/2 cup coconut flakes (optional) directions: add all ingredients into non stick rice cooker, stir and flip the switch. about 15 min later, your eating. I guess I didn't explain............... very well? The 3 days was for the notaria paperwork. I had all the translations done and apostilles attached before I left home for Colombia. The US Embassy mess was for my wife's visa. Direct Consular Filing in 2002. That place is a zoo!! But when a US Senator on the Foreign Relations Committee got pissed, things got done real fast!!

The paperwork for the Marriage........ took me only 3 days to complete. But the US Embassy in Bogota!!!
That's a whole different story! Took us 3 trips to Bogota and 7 months to complete and that was with much help from a US Senator. The Embassy lost much of the paperwork until the Senator got involved, then miraculously found it. Hope for the best, But expect the worst! I wish you Good Luck.

I've done exactly that................ Bought a car stero (CD Player) and took it to Colombia for my family. Packed it in my suitcase "in origional box" and had no problems going through customs. No tax, No questions!! I've never been taxed on anything I carried into Colombia.

I've stayed there many times. It's just a few blocks from the Prado. Love the place! Perfect combination of central location, very nice accomadations & economy (complete with Pool, bar, restaurant & internet cafe).

I've read that it originated in Bolivia..... as a salad made with beef and potato. But I think Platano is correct with his post. Guess it all boils down to leftovers???
